Coconut Curried Fish Recipe

Ingredients :

cloves garlic, chopped
piece fresh root ginger, chopped
large fresh red chili, seeded, cored and chopped
vegetable oil
large onion, quartered and sliced
ground cumin
ground turmeric
coconut milk
firm white fish fillet, such as cod or halibut, cut into 5 cm pieces
coriander sprigs and lime wedges, to garnish
Method :
  1. Put garlic, ginger and chili in a blender.
  2. Add 150 ml water.
  3. Mix until smooth.
  4. In a wok or saut pan over medium heat, heat oil.
  5. Add onion and fry 5-7 minutes until beginning to color.
  6. Add cumin and turmeric and stir for 30 seconds.
  7. Stir in garlic mixture.
  8. Cook, stirring for about 2 minutes until liquid has evaporated.
  9. Stir coconut milk into pan.
  10. Bring to the boil and bubble until sauce is reduced by half.
  11. Add salt to taste.
  12. Add fish and spoon sauce over it so it is covered.
  13. Heat to a simmer and cook gently for 4-6 minutes until fish just flakes when tested with the point of a sharp knife.
  14. Garnish with coriander sprigs and lime wedges.
  15. Serve with rice.
Serves 3-4
